Identity of the establishment inside and out: decor, location, context, room environment ... the owner’s experience and mode of running the establishment (family run, staff...)

- Possible legal obstacles for business development: company transfer problem, non ownership of the business and / or the premises
- Customer segmentation and activity:
- Involvement or not in a marketing process (website, direct marketing ...), existing  links with public or private tourism stakeholders to market and promote their establishment. This analysis led to an overall view of the audited company, owner and operations and in particular adaptation to market needs. It then became easier to understand why some businesses worked better than others. This expertise was a prerequisite for the ranking into three main categories of restaurants in the Gers, allowing clients to identify different types of restaurant easily.
